Ad Lib – Informal Fine Dining at Hotel Welschen

Dietmar & Nicole Sawyere, who run two separate Michelin-starred restaurants with 17 Gault Millau points in Nidwalden, have launched a brand-new informal fine dining concept at Hotel Welschen, showcasing the finest products from Switzerland’s valleys, mountains, meadows, and lakes.

Ad Lib is down-to-earth yet elegant, lovingly designed and passionately run. Dietmar originally hails from Switzerland but has had the privilege of living and working in eight countries worldwide. Over his 45-year career, he has opened and managed 32 restaurants – from simple cafés to Michelin-starred establishments.

For Ad Lib, Dietmar chose spontaneity, which also inspired the restaurant’s name. As always, he sources the finest available products, with a special focus on local ingredients, and prepares them in the most fitting way. The menu changes regularly.

Spontaneity also extends to the wine list: Nicole is constantly searching for the perfect wines to complement the dishes and delight the guests. As passionate ambassadors of Swiss wines, these make up a large part of the selection. The rest of the list features a curated collection of international wines – well-known classics as well as surprising discoveries from small, exciting producers.
