Ad Lib – Informal Fine Dining at Hotel Welschen

Dietmar & Nicole Sawyere, who run two separate restaurants in Nidwalden with one Michelin star and 17 Gault Millau points, have opened a brand-new informal fine dining concept at the Hotel Welschen, showcasing the best produce from Switzerland’s valleys, mountains, meadows and lakes.

Down-to-earth, elegant and full of passion

Ad Lib is down-to-earth yet elegant, lovingly designed and run with passion.

Although originally from Switzerland, Dietmar had the privilege of living and working in eight countries around the world. Over a career spanning more than forty-five years, he has opened and operated thirty-two restaurants, ranging from simple cafés to Michelin-starred establishments.

Spontaneity as the guiding principle

For Ad Lib, Dietmar has chosen spontaneity, which inspired the restaurant’s name.
As always, he sources the very best products available, with a focus on local ingredients, and prepares them in the style most appropriate to each ingredient.

The spontaneity also extends to the wine list:
Nicole is in constant search of the perfect wines to pair with the dishes and delight the guests.

Nicole and Dietmar are dedicated ambassadors of Swiss wines, which form an important part of the selection.
