The Zermatt–Matterhorn destination is being enriched with another culinary concept. Starting next winter season, guests can look forward to a new gastronomic highlight at a well-known location.

From December 2026, Yama Noir will open in the former Restaurant Le Chalet – an izakaya and sake bar with an atmosphere stylistically inspired by Japanese nightlife of the 1980s. At the same time, Matsunozushi 79 will be created: an exclusive, hidden omakase area within the restaurant, dedicated to traditional Edomae sushi.

The idea grew out of a long-standing friendship between hotelier Daniel F. Lauber and entrepreneur Koji Nishinaga. Nishinaga, who grew up in Zermatt and has Japanese roots, brings his international gastronomy experience to the project.  
At the heart of Yama Noir are high-quality sake, Japanese cocktails, and modern interpretations of classic izakaya dishes.

Yoshinori “Yoshi” Tezuka, a fourth-generation sushi master and owner of the historic Matsunozushi in Tokyo, contributes his expertise in Zermatt. In the exclusive omakase area, he will create individual sushi menus using traditional Edomae techniques.
