Sustainability is central to the Zermatt – Matterhorn destination. But the only way to ensure long-term success is through collective action. In this section, our service partners from different sectors introduce themselves and report on how they are tackling sustainability individually. These exciting and inspirational approaches all pursue a common goal: a sustainable future for nature, visitors and local people.
Brasserie Uno is an inspirational fine dining restaurant with a rustic style, where haute cuisine and sustainability create the perfect combination. Chefs Luis Romo and Tommaso Guardascione are guided by the seasons and the diversity of regional products. Working with small producers and ingredients from their own gardens, they create dishes that reflect nature and its rhythms.
With a philosophy of minimal food waste, every product is treated with respect and creativity. This attitude of creativity, environmental awareness and a deep connection to Zermatt defines the distinctive style of Brasserie Uno.
It is a philosophy supported by owner Andreas Alm, who is also committed to sustainability and hospitality. Brasserie Uno has been awarded a Michelin star, a green Michelin star and two rings in the 360° Eat Guide – recognition of its commitment to responsible fine dining.
